Abstract

Salmonella sp. is a bacteri that causes of contamination on broilers and salmonellosis in humans.  The acording of SNI 7388 (2009), chicken meat safety for comsumption is must be negative Salmonella sp content.  The porpuse of this research was to identify Salmonella sp. contamination on boilers at traditional market and modern market in Bandar Lampung.  This research used samples of chicken meat from 3 traditional markets (Gintung Market, Rajabasa Market and Tamin Market) and 2 modern markets (Robinson Super Market and Chandra Super Market).  All of samples were isolated on to selective media Xylose Lysine Desoxycholate (XLD) agar with 3 replication.  The result showed that contamination of SalmonellIa sp. was identified on boilers at traditional market and modern market with the contamination level on Gintung Market was 4,80x108 CFU/g – 2,48 x109 CFU/g, Rajabasa Market was 3,68x108 CFU/g, - 1,24x109 CFU/g, Tamin Market was 3,30x108 CFU/g – 3,68x109 CFU/g, Robinson Super Market was 3,27x104 CFU/g – 1,50x105 CFU/g and Chandra Super Market was 3,30x104 CFU/g – 1,13x105 CFU/g. The conclusion was this research was the contamination level at traditional markets was higher then the modern markets.Keywords: broilers, contamination, modern market, Salmonella sp., traditional market.

Abstract

The purpose of this study was to identify the presence of formaldehyde in some fresh fish commodities and to trace formaldehyde distribution in Bandar Lampung City. The  formadelhyde tests were done  on the storage water of fresh fish samples. The study conducted in July to October 2013 was devided in two stages: a survey to fill out a questionnaire to a number of respondents, followed by sampling some storage water of fresh fish to be tested in the laboratory.  The tests were  carried out on 52 sampling points taken from the fishing boats in the fishing landing port (17 boats), fish supplier car from outside Bandar Lampung (6 cars) as well as some fish sellers in 5 traditional market in Bandar Lampung (29 sellers). By conducting a laboratory test using Formaldehyde Test Kit, there were 2 samples that were purple (positively contain formaldehyde), which were taken from 2 boats in fish landing port of Lempasing. Then the assertion test was carried out to the positive samples using chromotropic acid (SNI 01 – 2894 – 1992). The results showed that the samples positively contained formaldehyde indeed, which was characterized by a bluish purple color. Based on the survey results and tracking, there was a distortion of formaldehyde distribution in Bandar Lampung, where domestic industries (including fisherman) obtained formaldehyde illegally, either from End Users, a local manufacturer or drugstore/hospital/other health care facilities. Abstract

Goat milk is perishable foodstuffs and has  low shelf life. One way to preserve it is process goat milk into ice cream. This is usefulforreducingthe damagenutritiongoat milk. Purple sweet potatoes which contain some anthosianin can be added to inprove the texture. However, the amount of purple sweet potato  added will affect the texture and body of icecream.  Therfore this research is needed. This research was purposed to find concentration of purple sweet potato that will produce the best ice cream especially on organoleptic characteristic. The experiment was arranged in  Latin Square design in single factor that consist of 5 levels  concentrations of purple sweet potato paste. There were 0% (reference), 10%, 20%, 30%, and 40% (b/b) with 5 replications. Data were analyzed using analysis of variance . further tested using the HSD Test in 5% level of signiificance. The The results showed that addition of  30%  sweet potato paste produced the best quality of goat milk ice cream of Etawa . The score of aroma was 3,5 (not specific goat milk), the taste’s score was 3,47 (sweet), color’s score was 2,8 (rather purple), texture’s score was 3,5 (soft), and the overall  of acceptance was 3,203 (rather like). This ice cream contained water, protein, fat, ash, crude fiber, and total carbohidrate as amuch as 66,98%, protein was 5,5%, 11,86%, 1,34%, 0,3% and 14,2%. Abstract

Trash fish is a fish with low selling value that needs an increased value by processing it into rusip (fermented fish) products. The research objective was to determine the effect of liquid palm sugar and salt concentrations on the physical, chemical, and microbiological properties of trash fish rusip. The research was arranged factorial in a completely randomized block design. The concentrations of liquid palm sugar were 5%, 10%, and 15% (v/w), while concentrations of salt were 20%, 25%, and 30% (w/w).  Using LSD at level 5% showed that the concentration of liquid palm sugar had a significant effect on total lactic acid bacteria and total lactic acid, while the salt concentration had a significant effect on pH and salt content. There was an interaction between two factors on the trash fish rusip water content, where the significant effect of liquid palm sugar concentration on water content was salt concentration-dependent.Keywords: chemical, microbiological, physical, rusip, trash fish.
